When you want comfort food there's nothing like meatloaf. Here is a revised version of the old favorite but with ground turkey, a bold thyme flavor, and a tangy cherry tomato puree topping.
- 1 pound ground turkey
- 2 teaspoons Fuller’s Sage Blend
- 1 cup regular oatmeal
- 1 teaspoon dried thyme or 2 teaspoon fresh thyme chopped
- 2 eggs, lightly beaten
- ½ red onion finely chopped
- ½ teaspoon salt
- ¼ teaspoon black Pepper
Topping:
- 1 cup cherry tomatoes, cut in half
- 1 clove garlic minced
- ½ teaspoon olive oil
- Pinch of salt
Pre-heat the oven to 350 degrees and oil a loaf pan or 13x9 inch shallow baking dish. Combine the first eight ingredients in a large bowl and stir to combine. Shape into a smooth loaf about 12 inches x 5 inches. Cover with foil or lid and bake for 35 minutes.
While the meat loaf bakes put the cherry tomatoes, minced garlic and salt in a small sauce pan. Cook on medium low stirring and mashing the tomatoes until they have formed a puree about 8 minutes.
Uncover the meat loaf, test the temperature. It should read about 150 degrees. Spread the tomato puree on the top and return to oven and bake uncovered for another 15 minutes.
